Peanut Butter Cookies

A quick and easy to make cookie.

Ingredients

     
7 ½ ounces all-purpose flour
1 teaspoon baking soda
1 teaspoon table salt
6 ½ ounces creamy peanut butter
3 ounces granulated sugar
5 ounces brown sugar
2 tablespoons honey or corn syrup
2 teaspoons vanilla
4 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F. Line two large baking sheets with silicone or use non-stick cookie sheets.

  2. In a medium bowl, whisk together flour, baking soda, and salt until thoroughly combined.

  3. In the bowl of a stand mixer fitted with the paddle attachment, beat the peanut butter, granulated sugar, and brown sugar on medium speed until smooth and creamy. Add the honey, vanilla, and melted butter; beat until the mixture is fluffy.

  4. Reduce the mixer speed to low. Gradually add the dry ingredients to the wet ingredients in three separate batches, mixing after each addition just until the flour is no longer visible.

  5. Shape the dough into 1-inch balls. Arrange the balls 2 inches apart on the prepared baking sheets, placing 12 cookies per tray. Using the tines of a fork, gently press a crisscross pattern into the top of each cookie to flatten slightly.

  6. Bake on the middle rack of the oven for 10 to 12 minutes. Remove from the oven when the edges are lightly golden.

  7. Let the cookies cool on the baking sheets for 5 minutes to allow them to collapse and set slightly before transferring them to a wire rack to cool completely.

Variations

Extra peanuts. For extra crunch, using stand mixer combine on low ½ cup of finely chopped roasted peanuts into the dough just before shaping it into balls.
